I love simple and yummy cakes and this one is really amazing. I made it with eggs but it’s possible to make also vegan version, just see my notes.
The recipe is: gluten-free, yeast-free, lactose-free, dairy-free, soya-free, and vegetarian. For egg-free and vegan version see my notes.

Preparation: 5+ 20 min.
Cooking: 40 min.
Makes: one rectangle cake (approx.15 squares)

- 1 cup basmati rice (280g)
- 2 cups almond milk (500ml)
- 3 eggs (medium)
- 2 tbsp. agave syrup (nectar) (40ml)
- 6 large apples (750g) (peeled, coarsely grated and squeezed)
- 1 cup raisins (150g)
- 1 tsp. vanilla powder
- 1 tsp. ground cinnamon
- Extra
- 2 egg whites
- 1 tbsp. powdered birch sugar
- For vanilla pudding
- 2 egg yolks
- 1 cup almond milk (250ml)
- 1 tbsp. tapioca flour (starch)
- 1 tsp. vanilla powder
- 1 tbsp. powdered birch sugar
- Preheat the oven to 175°C. Line a tin with baking parchment.
- Cook basmati rice with almond milk in a saucepan. (over very low heat for about 15 minutes or read label instructions)
- In a bowl, combine cooked rice, agave syrup, 3 eggs, grated apples, raisins, vanilla powder and cinnamon.
- Place the mixture into the prepared tin.
- Beat the egg whites with powdered birch sugar in a stand mixer.
- Spread the egg white foam on the top of the prepared mixture.
- Bake for 40 minutes.
- In a meantime, in a small saucepan mix all ingredients for your vanilla pudding.
- Cook over a low heat for about 5 minutes (constantly stir it).
- Remove from the heat and set aside.
- Remove rice cake from the oven; allow to cool a bit (covered with tea towel).
- Cut and serve wit vanilla pudding.
Make sure you choose organic GMO-free birch sugar and really made from birch.
VEGAN VERSION: omit eggs and pudding, cake will be a bit more delicate and you have to be very careful while cutting it. However, will be yummy, you can serve it with vanilla coconut cream or some vegan pudding. If you want to make the top layer with egg snow foam, simply use aquafaba instead of egg whites.
