This is very lovely and super easy cashew pudding. You can use fruit of your choice to add your favourite flavour…. There is always a way to make delicious but healthy dessert.
This pudding is gluten-free, lactose-free, dairy-free, soya-free, egg-free, vegetarian, and vegan. For raw version use finely grated apples instead of apple puree.

Makes: 4 small glasses

- 1 and ¾ cups soaked cashew nuts (200g)
- 1 cup soaked dried figs (200g)
- 1 cup apple pure (150g)
- 3 tbsp. carob powder
- 1 cup almond milk (250g)
- ½ tsp. vanilla powder
- fruit of your choice
- In a mixer, blend all ingredients until smooth. Spoon the mixture to prepared serving glasses and garnish with fruit of your choice.
You can eat this lovely pudding immediately. For raw version use finely grated apples instead of apple puree. If you didn’t soak nuts and figs in advance just soak them for 10 minutes in hot water before blending.
