Hi there, I’m Petra Nela. Welcome to my blog. I am from small country Slovakia located in the heart of Europe. I have been gluten free since 2014. My story is not only about me but also about my little daughter. I would probably list all the symptoms of celiac disease in order to describe what was wrong with me. So, I am going to mention only the most important things. One of my enemies is gluten. At that my little daughter has the same problem. I was desperate and very sad that our daughter has inherited this coeliac gene.
How do I perceive it now? We know what makes our daughter sick, so we can protect her. She can finally sleep without achy tummy and enjoy her childhood. I have to say I am glad that my partner has given up gluten (at home) in order to avoid risk of cross contamination. So, we have become gluten free family.
Why I have decided to create this blog?
I love cooking but baking wasn’t my cup of tea in the past. Searching for healthy, tasty and easy gluten-free recipes was time consuming and frustrating for me. Yes, there are a lot of interesting cookbooks, food blogs and food magazines but I have decided to create my own recipes. Why? I simply want to do it my way. My goal is to create simple, healthy and tasty recipes. I have discovered that not only cooking but also baking can be relaxing. I have read many books about gluten-free diet and as a result I was confused whether to omit also grains, starch… Finally, I have decided to look for a balance and vary our diet. What is a healthy and balanced gluten-free diet? I believe that freshness, quality, and variety are the most important factors for balanced gluten-free diet. Gluten-free food can be tasty and easy to make. There is no need to use 1 cup of sugar to make a sweet cake. Yes, I believe that healthy food can be also very tasty.I am not a professional chef or dietitian but I love to prepare healthy gluten-free food. Unfortunately, my personal diet is far more complicated because I had problem with Candida Albicans in the past and I have one more enemy called Histamine. Yes, I was also diagnosed with Histamine intolerance (HIT) but this blog will be mainly gluten-free sphere. 🙂 Anyway, you can find here some lactose-free, yeast-free, egg-free, nut-free, raw, vegetarian, vegan recipes here… and of course all my recipes are gluten-free. I will be happy to share my ideas and recipes with you. Well, I am not professional photographer, so my photos are not so professional. Anyway, I will try my best.
Perhaps you have one more question. Why English when I am not from English speaking country? I lived in London for many years and English language has become inseparable part of my personal and professional life. 🙂 Moreover, I believe that there are millions of people around the world who are searching for gluten-free recipes. So, I would like to share my recipes with you no matter where you are. I will try to include ingredients which will be hopefully available everywhere.
